Holiday Cheer

This beer is really more of a strong American Amber than a Barleywine. But, if it ends up over 9%ABV, "That'll do Pig, That'll do."

Type: Extract w/grain Size: 5 gallons
Color:
38 HCU (~18 SRM)
Bitterness: 53 IBU
OG: 1.085 FG: 1.015
Alcohol: 9.1% v/v (7.1% w/w)
Water: Pennsylvania Spring Water.
Grain: 1 lb. 8 oz. American crystal 60L
1 oz. American chocolate
0.5 oz. American black patent
Steep: Steeped for 40 minutes at about 152°F.
Boil: 60 minutes SG 1.071 6 gallons
9 lb. Light dry malt extract
Irish Moss at 20 minutes left in boil for clarity.
Hops: 1 oz. Chinook (12% AA, 60 min.)
2 oz. Willamette (5% AA, 15 min.)
Yeast: 1 vial White Labs #WLP008 East Coast Ale liquid for flavor, plus, 1 pkg (11g) Danstar Nottingham dry yeast for attentuation.
Log: Brewed 11/20/04. Actually used Columbus hop pellets for bittering instead of Chinook, but, Columbus isn't a choice in the spreadsheet. Just one more beer for the holidays.
Carbonation: 5 oz. Corn Sugar for bottle carbonation.
Tasting: Won't be sure until Christmas/New Year's consumption. Will most certainly be better around 2/1/05 after a little aging.
