winter barleywine

This will be my second barleywine.The first was a pale barleywine made from just three grains. This will be darker and sweeter. I will probably age this one until next Christmas.

Alcohol: 10.0% v/v (7.8% w/w)
Water: boiled well water with gypsum
Grain: 8.5 lb. British pale
.5 lb. Wheat malt
2 lb. German Munich
.5 lb. Belgian aromatic
.5 lb. Dextrine malt (Cara-Pils)
1 lb. British crystal 70-80L
2 oz. British chocolate
Mash: 75% efficiency
step infusion mash:

122 deg f for 20 min
155 for 80 min
170 for 20 min
Boil: 90 minutes SG 1.077 8 gallons
5 lb. Light dry malt extract
.5 lb. Brown sugar
Hops: 3 oz. Fuggles (4.75% AA, 90 min.)
2 oz. Kent Goldings (5% AA, 90 min.)
1 oz. Fuggles (4.75% AA, 25 min.)
1 oz. Kent Goldings (5% AA, 25 min.)
1 oz. Kent Goldings (aroma)
Yeast: 1/2 gallon starter of wyeast Thames valley ale yeast.
Carbonation: 1/2 cup priming sugar for medium-low carbonation typical of the English style
