Cinnamon and Honey Brown Ale

Bitterness: 17 IBU
OG: 1.069 FG: 1.013
Alcohol: 7.3% v/v (5.7% w/w)
Water: All water used in this recipe was filtered from a built in home water filter.
Grain: 8 oz. American crystal 60L
8 oz. Dextrine malt (Cara-Pils)
8 oz. American chocolate
Steep: All grains placed in one grain sock, and steeped from cold water to beginning of boil. Then they were well sparged by squeezing the sack until no liquid came out.
Boil: 60 minutes SG 1.173 2 gallons
3 lb. Light malt extract
3 lb. Amber malt extract
2 lb. 8 oz. Honey
Two sticks of cinnamon were added at the beginning of the boil (approx. 3 inches each)
Irish Moss added to secondary fermentor.
Hops: 1 oz. Hallertauer (4.1% AA, 60 min.)
0.5 oz. Liberty (3.1% AA, 60 min.)
.5 oz. Liberty (3.1% AA, 15 min.)
Yeast: 1 package Whitbread ale yeast

Bottled 11/29/97
Carbonation: 3/4 cup of corn sugar
