Alcohol: 6.6% v/v (5.2% w/w)
Grain: 1.00 lb. American crystal 40 L
4.0 oz. British chocolate
4.0 oz. British black patent
Steep: steep grains at 160 degrees for 30 minutes then add extract and boil for 60 minutes
Boil: 60 minutes SG 1.056 5.5 gallons
6.6 lb. Amber malt extract
1.00 lb. Honey
add 1/4 teaspoon of Irish Moss with 15 minutes left of boil for clarity. Add 1 lb. of honey after heat is off, do not boil the honey
Hops: 1.00 oz. Northern (5% AA, 60 min.)
1.00 oz. Cascade (6% AA, 15 min.)
Yeast: White Labs 005 British Ale Yeast
Log: ferment for 10 days then rack in to keg
Carbonation: force carbonate at 28 lbs of co2 for 2 days the reduce to 5 lbs co2 to serve.
Tasting: finish has a slite sweetness, very good with age.
