Bitterness: 28 IBU
OG: 1.067 FG: 1.014
Alcohol: 6.8% v/v (5.3% w/w)
Water: Add a teaspoon of gypsum if you like.
Grain: 0.25 lb. Belgian Biscuit
0.5 lb. American Crystal 120L
0.5 lb. Belgian CaraVienne
0.25 lb. Belgian Special B
0.125 lb. Roasted Barley
Steep: Steep grains for 45 minutes @ 155° - 160° F.
Boil: 60 minutes SG 1.067 5 gallons
6 lb. Light LME
2 lb. Light DME
Add 1 teaspoon of flaked Irish Moss the last 15 minutes of the boil.
Add 2 teaspoons of cinnamon, 1 teaspoon of allspice and 1 teaspoon of ginger with the aroma hops.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Willamette (aroma)
Yeast: Wyeast #2112 (California) or White Labs WLP001 (California)
Carbonation: Bottle using corn sugar or force carbonate in a keg.
