Northern AZ Brown ver.3

This is my 3rd attempt at this Brown Ale.

Type: All grain Size: 13 gallons
Color:
44 HCU (~20 SRM)
Bitterness: 33 IBU
OG: 1.056 FG: 1.016
Alcohol: 5.2% v/v (4.1% w/w)
Water: All watter is RO.
Grain: 24 lb. German Pilsner
3.5 lb. Muntons dark crystal 70-80L
6 oz. British chocolate
2.5 oz. British black patent
2 lb. Gambrinus Honey Malt
Mash: 70% efficiency
Mashed in at 165°F to rest at 153°F for 1 hour. Check for conversion & mash out at 169°F & collected 14 gallons.
Boil: 60 minutes SG 1.052 14 gallons
Hops: 3 oz. Kent Goldings (5% AA, 60 min.)
2 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Kent Goldings (5% AA, 15 min.)
Yeast: 1/2 gallon starter of White Labs WLP001 California Ale Yeast. Positive pressure in air lock in 6 hrs. had to install blow off line by noon the next day.
Log: Ferment in a water bath at 75°F until finished then rack to secondary to clear. Keg & chill to 40°F until finished
Tasting: Ver.2 was a little to dry looking for some sweetness & nutty flavor.
