1 lb. Belgian CaraVienne
1 lb. British crystal 50-60L
2 oz. British chocolate
2 oz. British black patent
1 oz. Roasted barley
4 oz. American Special Roast
Mash: 68% efficiency
Mash in with 3.5gal water stablize temp. 155F hold 75 min
Mash out 170F hold 15 min
Boil: 75 minutes SG 1.039 7 gallons
1.5 oz fuggle and 1 oz williamette at 75 min boil
Irish Moss at 20 min boil
.5 oz cascade at 15 min boil
1 oz cascade finish
Hops: 1.5 oz. Fuggles (3.9% AA, 75 min.)
1 oz. Willamette (3.7% AA, 75 min.)
.5 oz. Cascade (6% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: Wyeast starter with American Ale yeast 1056
Log: Primary fermintation 7 days
Secondary fermintation 11 days
Bottled - 1.25 cups DME as prime
Carbonation: 1.25 cups DME as Prime
Tasting: Very malty with nice bitterness.
