50 HCU (~22 SRM)
Bitterness: 59 IBU
OG: 1.054 FG: 1.018
Alcohol: 4.6% v/v (3.6% w/w)
Water: no treatment. I use my well water.
Grain: 18 lb. American 2-row
2 lb. American crystal 20L
.5 lb. American chocolate
.5 lb. American black patent
Mash: 70% efficiency
single step infusion mash holding 155 for 60 min.
Boil: 60 minutes SG 1.045 12 gallons
Hops: 3 oz. Brewers Gold (8.5% AA, 60 min.)
2 oz. Cluster (7% AA, 15 min.)
2 oz. Willamette (aroma)
Yeast: White Labs California Ale yeast pitched at approx. 70 deg F
Log: 7 days primary. I like to go 14 days in secondary. Haven't had any trouble. I know ales can be done in 14 days but I like to make sure it's real clear plus I feel it helps with the dycetal rest
Carbonation: 2.0 volumes Keg: 18.3 psi @ 65°F
I do not have a frige for storage so all of my ales are done in the basement and after kegging stay in the basement. Ambient is approx. 65 deg F.
Tasting: I tried Newcastle Brown ale months after making this brew and was surprised, if my memory is correct, at how much it tasted like the brew I made. Never had a brown ale prior to this recipe. When I go out to dinner New Castle is one of my favorite drinks of choice. Enjoy.
