Lego Bitter Brown Ale

This needs to be ready by 8th of Sep. Pro Brewer rec S-04 yeast for quick turn around.

Type: All grain Size: 2.0 gallons
Color:
85 HCU (~31 SRM)
Bitterness: 98 IBU
OG: 1.070 FG: 1.025
Alcohol: 5.8% v/v (4.5% w/w)
Water: Boiled Hollywood tap, some Gypsom to be added.
Grain: 3 lb. American 2-row
1 lb. American crystal 60L
4 oz. American crystal 120L
1 lb. Belgian CaraMunich
Mash: 75% efficiency
154°F for a while.
Boil: 60 minutes SG 1.056 2.5 gallons
Yeast ex nutrient.
Hops: 1.5 oz. Cascade (6% AA, 60 min.)
.5 oz. Nugget (12% AA, 15 min.)
.5 oz. Nugget (aroma)
Yeast: s-04 dry, wort to be swished for air.
Log: Was a big mess to bottle because used my large kettles etc. but wuz great. Good body. required higher carbonation and aging but a good beer.
Carbonation: miscalculated- should be higher!
Tasting: Very flavorful ale. Thick body. needs dry hopping / more carb!
