Fool's Tax Brown Ale #2

Beer: Fool's Tax Brown Ale #2 Style: American Brown
Type: Extract w/grain Size: 5 gallons
Color:
68 HCU (~27 SRM)
Bitterness: 24 IBU
OG: 1.062 FG: 1.017
Alcohol: 5.9% v/v (4.6% w/w)
Water: Use bottled spring water (Poland Spring)
Grain: 4 oz. American chocolate
4 oz. British black patent
2 oz. Roasted barley
1 lb. American crystal 10L
Steep: Steep grains in 2 Gal of 158°F water for 1 hour
Rinse with warm (120-140°F) water - do not squeeze grain bag
Boil: 45 minutes SG 1.125 2.5 gallons
8 lb. Light malt extract
1 Tsp Irish moss at 25 minutes (for last 20 minutes)
Hops: 1 oz. Brewers Gold (8.5% AA, 45 min.)
.75 oz. Fuggles (4.75% AA, 45 min.)
2 oz. Cascade (6% AA, 5 min.)
Yeast: options:
Wyeast #1272, 10087, 1335, 1318, 1084
Log: One stage fermentation ~7-10 days
Carbonation: use between 2/3 & 3/4 cup corn sugar for priming,
dissolved in 2 pints water
Tasting: age in bottles at room temp (60-70°F) for 3 weeks
Cool to 45-50°F for serving
