Alcohol: 4.6% v/v (3.6% w/w)
Water: Use filtered tap water for all water needs. 1 tsp. Burton water salts in mash water. 2 tsp. Gypsum in sparge water.
Grain: 16.75 lb. American 2-row (Briese)
12 oz. British brown 45L (Steve Z's)
4 lb. American crystal 60L (Briese)
8 oz. Dextrine malt (Cara-Pils) (Briese)
8 oz. Belgian Special B (Dewolf-Cosyns)
Mash: 74% efficiency
Start with 28 quarts water with a strike temp of 165° , 1 step mash held at 153°for 60 min., raise to 170° for 10 min.,sparge with 170° water for a total of 13.75 gallons of hot wort.
Boil: 60 minutes SG 1.044 13.75 gallons
Add 2oz. Fuggles at start of boil, .5oz Fuggles at 30 minuts, 1oz. Kent Goldings and 2 tsp. Irish moss at 45 min.
Hops: 2 oz. Fuggles (4.9% AA, 60 min.)
.5 oz. Fuggles (4.9% AA, 30 min.)
1 oz. Kent Goldings (4.4% AA, 15 min.)
Yeast: Wyeast # 1028 London (use a starter of 24-32 oz.)
Log: Hold at 64-66 deg. in primary for 10-14 days,10-14 days in secondary. Keg and age for 3-4 weeks befor carbonating.
Carbonation: 2.2 volumes Keg: 11.4 psi @ 45°F
