Water: 25 gallons Reverse Osmosis water with 1 Tbs Gypsum.
Grain: 24 lb. British pale
1 lb. Dextrine malt (Cara-Pils)
1 lb. Belgian Special B
1 lb. British crystal 50-60L
1 lb. British chocolate
1 lb. British crystal 135-165L
Mash: 80% efficiency
Single infusion mash with 12.5 gallons. Target temperature is 152 degrees p/m 1 degree. Sparge with 12.5 gallons at 168 degrees.
Boil: 60 minutes SG 1.037 23 gallons
1 Tbs Irish Moss added 30 minutes from end of boil.
Hops: 0.5 oz. Fuggles (4.75% AA, 60 min.)
1.25 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Fuggles (4.75% AA, 30 min.)
0.5 oz. Kent Goldings (aroma)
Yeast: Wyeast British Ale II (1335) in 1 liter starter.
