Bitterness: 37 IBU
OG: 1.056 FG: 1.015
Alcohol: 5.3% v/v (4.2% w/w)
Water: Add 1 tsp. Gypsum and 1/2 tsp. CaCL2 to sparge water.
Grain: 9.20 lb. British Pale - Maris Otter
8 oz. American Crystal 20L
4 oz. American Crystal 120L
Mash: 75% efficiency
Mash at 152°F for 60 minutes.
Boil: 60 minutes SG 1.043 6.5 gallons
1 teaspoon Irish Moss added with 15 minutes left in the boil.
Hops: 2 oz. Goldings (5% AA, 60 min.)
1 oz. Willamette (aroma)
Yeast: Wyeast 1968 London ESB Yeast
Log: Ferment at 68°F for one week, transfer to secondary and ferment for one additional week at 68°F.
Carbonation: Keg and carbonate to 1.5 volumes with CO2.
