This won silver at Iowa State fair 1999 as a partial mash.

Bitterness: 47 IBU
OG: 1.057 FG: 1.017
Alcohol: 5.2% v/v (4.1% w/w)
Water: Filtered tap water
4tsp. Burton water salts
Grain: 8 lb. Czech Moravian 2-row (Pilsner)
7.5 lb. Briess Pale ale 2-row
10 oz. Briess American victory
3.5 lb. Czech Moravian crystal 30L
12 oz. Briess Dextrine malt (Cara-Pils)
4 oz. Czech Moravian chocolate
Mash: 78% efficiency
Start 24 qts.water add 2 tsp. Burton water salts to mash water,heat to 170° and hold at 154° for 70 minutes, mash out at 170° for 10 minutes. ( add 2 tsp. water salts to sparge water) sparge grain for a total of 11.5 gallons of wort for boil.
Boil: 60 minutes SG 1.051 11.5 gallons
Add hops as directed and 2tsp.Irish moss last 15 minutes of boil.
Hops: 3.5 oz. Kent Goldings (5.1% AA, 60 min.)
.75 oz. Fuggles (4.3% AA, 45 min.)
1 oz. Fuggles (4.3% AA, 30 min.)
1 oz. Fuggles (4.3% AA, 10 min.)
Yeast: Wyeast # 1968 Special London (ESB), make starter in advance.
Log: Ferment at normal ale temps.65-68 degrees.
Carbonation: 1.9 volumes Corn Sugar: 2.71 oz. for 5 gallons @ 66°F
I'm spliting this batch (5 gallons bottled 2.71 oz. corn sugar @66 degrees,force carbonate 5 gallon keg for total of 10 gallons. Carbs are slightly high for style but I think this makes for a better beer.
Tasting: First tast of cooled wort it has a malty start with a nice bitter end.
