Bitterness: 40 IBU
OG: 1.056 FG: 1.016
Alcohol: 5.1% v/v (4.0% w/w)
Water: Plain old St. Louis city water.
Grain: 8 oz. Muntons Carapils 20L
8 oz. British Carastan 37L
Steep: Steep crushed grains in 5 gallons of 150 degree water for 30 minutes.
Sparge with 3 quarts 170 degree water to make 5.75 gallons.
Boil: 60 minutes SG 1.048 5.75 gallons
3 lb. 8 oz. John Bull light malt extract
3 lb. Muntons light dry malt extract
1 teaspoon Irish Moss at 15 minutes.
Hops: 0.5 oz. Northern Brewer (9.5% AA, 60 min.)
0.9 oz. Fuggles (4.5% AA, 45 min.)
0.7 oz. Kent Goldings (5.6% AA, 15 min.)
0.3 oz. Kent Goldings (aroma)
Yeast: Thames Valley (Wyeast 1275) 500ml starter.
Log: Primary fermentation (plastic) for 1st week.
Racked to secondary (glass) for 2nd week.
Dry hopped with 0.5 ounces Kent Goldings pellets for 3rd week.
Bottled with 4.5 ounces of corn sugar.
