Alcohol: 6.1% v/v (4.8% w/w)
Water: 2 tsps gypsum added to mash water
Grain: 9 lb. British pale
4 oz. Belgian CaraMunich
1 lb. American crystal 40L
Mash: 80% efficiency
Step mash with holds at 122, 150 & 158. Actually used British Crystal 30-37 L & also 4 oz Bisquit.
Boil: 70 minutes SG 1.047 6.5 gallons
Used two tsps Irish Moss 5 minutes before end
Hops: 1 oz. Fuggles (5.6% AA, 65 min.)
.5 oz. Kent Goldings (4.3% AA, 65 min.)
1 oz. Kent Goldings (3.7% AA, 50 min.)
1 oz. Kent Goldings (3.7% AA, 5 min.)
Yeast: White Labs English Ale Yeast WLP002; made a one pint starter 24 hours before pitching w/ 1 1/2 cups of light dry malt
Log: 2/4/00 Brewed; yeast pitch at 88 degrees
