Schlafly Winter ESB Clone Attempt

Not an actual clone attempt of Schlafly's Winter ESB. Type: All grain Size: 5.5 gallons
Color:
14 HCU (~9 SRM)
Bitterness: 50 IBU
OG: 1.060 FG: 1.016
Alcohol: 5.6% v/v (4.4% w/w)
Water: 1/2 campden tab in 4.5 gallons mash water
1/4 campden tab in 1.75 gallons mash out water
1/4 campden tab in 2 gallons sparge water
Grain: 11 lb. American 2-row
1 lb. German Munich
12 oz. American crystal 60L
1 lb. Flaked rye
Mash: 65% efficiency
Standard 1-hour mash at 153°.
Mash-out for 15 minutes by adding 1.75 gallons of boiling water
Sparge with 2 gallons of 170° water.
Boil: 60 minutes SG 1.049 6.75 gallons
IMPORTANT: The actual hop schedule proceeds thusly:
First Wort Hops: .5 oz. UK Fuggles
60 Minutes: 1 oz. 10.5% Alpha Acid UK Pilgrim
10 Minutes: 1 oz. UK Fuggles
Flameout: .5 oz. UK Fuggles
Hops: 1 oz. UK Pilgrim (12% AA, 60 min.)
1 oz. UK Fuggle (4.8% AA, 15 min.)
1 oz. UK Fuggle (aroma)
Yeast: Wyeast London ESB Ale (1968)
