Waymouth Ordinary Bitter

A simple quaffing bitter.

Type: Extract Size: 20 liters
Color:
10 HCU (~7 SRM)
Bitterness: 29 IBU
OG: 1.036 FG: 1.009
Alcohol: 3.5% v/v (2.7% w/w)
Water: Burtonised with 20g gypsum and 4g citric acid added at start of boil. The water used has 120mg/L bicarbonate and 11mg/L sulphate otherwise.
Grain: 200g British crystal 50-60L
Steep: Bag of crushed grain steeped in the water until it comes to the boil.
Boil: 90 minutes SG 1.036 20 liters
2kg 250g Light malt extract
Irish moss added 15 min before flame-off.
Hops: 40g Kent Goldings (5.5% AA, 60 min.)
10g Kent Goldings (aroma)
Yeast: Safale.
