Ken's Cotswold Bitter

My extract version of Arkell's 3B found in CAMRA's Brew Your Own British Real Ale At Home book. Following the original recipe called for table sugar and had no adjustment for the hops going from all grain to extract w/grains. I dropped the hops about 30% and went with a 60 minute boil.

Type: Extract w/grain Size: 5 gallons
Color:
16 HCU (~10 SRM)
Bitterness: 31 IBU
OG: 1.042 FG: 1.010
Alcohol: 4.1% v/v (3.2% w/w)
Water: Didn't Burtonize, just used RO water.
Grain: 1 lb. .5 oz. British crystal 50-60L
Steep: In .5 gallon of water @ 150 F then sparged with another .5 gal @ 150 F.
Boil: 60 minutes SG 1.037 5.6 gallons
3 lb. 15 oz. Light malt extract
1 lb. 1.5 oz. Light dry malt extract
1 Tsp Irish Moss for last 15 minutes.
Hops: .5 oz. Fuggles (4.00% AA, 60 min.)
1.0 oz. Kent Goldings (5.2% AA, 60 min.)
.3 oz. Kent Goldings (5.2% AA, 15 min.)
Yeast: Wyeast 1028 stepped up to 1 liter starter.
Carbonation: Carbonated in keg at 1.0 Co2 volumes
Tasting: Just like it should. If you have ever spent time in a real west country pub, then you would recognize it.
