Pail Hail

Nothing ordinary about it. Should be called Extraordinary bitter. A simple brew with excellent natural qualities. This one will make immediate converts of your megabreweiser swill drinking friends.

Type: All grain Size: 11 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 32 IBU
OG: 1.035 FG: 1.009
Alcohol: 3.4% v/v (2.7% w/w)
Water: Begin with 16 gallons rev-os filtered H2O available
Add 2 tbsp Water Crystals to mash/sparge liquor
Grain: 10 lb. American 2-row
2 oz. British chocolate
1 lb. American crystal 40L
Mash: 90% efficiency
Mash in 130 - thick
Adjust mash Ph to 4.5 - 5.0 using lactic acid if needed
Slow raise temp to 152 - add H2O as needed
Hold till complete, no more than 120 min
Mash out 168 - 5 min
Adjust Ph of sparge liquor to 4.5 - 4.8 before raising temp
Sparge 168
Boil: 105 minutes SG 1.030 13 gallons
0 lb. 8 oz. Brown sugar
Add brown sugar to boil.
Add 2 tbsp irish moss 20 minutes before end of boil
Hops: 2 oz. Fuggles (4% AA, 60 min.)
.5 oz. Kent Goldings (4.5% AA, 60 min.)
.5 oz. Northern Brewer (7.5% AA, 60 min.)
.5 oz. Kent Goldings (4.5% AA, 15 min.)
.5 oz. Northern Brewer (7.5% AA, 15 min.)
Yeast: Wyeast 1968 Special London Ale - 2 qts.
Ferment 65-68 deg.
Carbonation: 1.3 volumes Keg: 2.4 psi @ 50°F
Tasting: I'm using a RIMS system and keeping the mash stirred. This along with lowering the Ph of sparge liquor and mash keep efficiency very high. This was an excellent well balanced year round quaffing ale served on a nitro blend. Didn't use the RO filtered water last time. It should be even better this time around.
