Desert Pale

Light and Hoppy ale for those days in the desert sun.

Beer: Desert Pale Style: West coast pale
Type: All grain Size: 6.5 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 56 IBU
OG: 1.042 FG: 1.010
Alcohol: 4.1% v/v (3.2% w/w)
Water: San Diego water is hard therefore perfect for pales. Boil for 90 minutes.
Cascades work well for aroma also.
Grain: 7 lb. 2-ROW BELGIAN PALE
1 lb. CARA-PILS
1 lb. VICTORY MALT
8 oz. CRYSTAL MALT (GERMAN)
8 oz. HONEY MALT
Mash: 75% efficiency
Mash in @ 140 degrees. Raise to 155.
Starch conversion 2 hours @ 155>145.
Mash out @ 175 for 5 minutes.
Boil: 90 minutes SG 1.034 8 gallons
1/2 teaspoon Irish moss 15 minutes before end of boil.
Hops: .5 oz. CENTENNIAL (10.6% AA, 60 min.)
.5 oz. NORTHERN BREWER (6.9% AA, 60 min.)
.5 oz. WILLIAMETTE (5.1% AA, 60 min.)
.5 oz. WILLIAMETTE (5.1% AA, 30 min.)
.5 oz. LIBERTY (4.3% AA, 30 min.)
.5 oz. LIBERTY (4.3% AA, 15 min.)
.5 oz. NORTHERN BREWER (aroma)
Yeast: California ale yeast.
Log: Dry hop with 1/2 oz Cascades 6.1%
Carbonation: Heavily carbonate.
Tasting: Light and hoppy west coast style. Easy to drink.
