Honey Honey Ale

A very good honey ale. Light and clean with a very pleasant taste. The
use of very little malt really brings the honey flavor forward without
becoming too mead-like.

Brewer: Chuck Kortman Email: cck8@juno,com
Beer: Honey Honey Ale Style: American Pale Ale
Type: Extract Size: 5.5 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 26 IBU
OG: 1.075 FG: 1.010
Alcohol: 8.4% v/v (6.6% w/w)
Water: 3Gal. spring water, 2.5 Gal tap.
Boil: 60 minutes SG 1.137 3 gallons
5.65 lb. Light malt extract
4.84 lb. Honey
Add 1 package of expired dried yeast to the boil. The high honey/low malt content makes
for a lack of yeast nutrients.(Also add yeast energizer to the cooled
wort) The boiled yeast gives those nutrients back. Add Irish Moss
15 min before finish.
Hops: 3.00 oz. Cascade (6% AA, 60 min.)
.5 oz. Cascade (aroma)
Yeast: White Labs California Ale Yeast
Log: Fermented at ~67°F. This brew does well at almost any temp but the
slower fermentaion produces a cleaner taste. I lager version might be
worth trying but I think it would lose a lot of the "ale" flavor.
Carbonation: 2.4 - 2.6
Tasting: I wonderful light honey ale. Very flavorful and refreshing. A hit with
beer lovers and the "light lager" crowd as well. This is a complex ale
that is best served cold. The honey taste really comes through.
