Big Hill Golden Ale

Went to all grain about a year ago and this was the first recipe I converted. Brewed a number of times since and have never been disappointed.

Type: All grain Size: 5.5 gallons
Color:
9 HCU (~7 SRM)
Bitterness: 31 IBU
OG: 1.062 FG: 1.010
Alcohol: 6.7% v/v (5.2% w/w)
Water: Spring fed house water. Just hard enough.
Grain: 6 lb. American 2-row
2 lb. Wheat malt
3 lb. American crystal 10L
8 oz. Dextrine malt (Cara-Pils)
1 lb. Flaked barley
Mash: 75% efficiency
Rest at 122° for 20 minutes.
150° for 90 minutes.
Raised to 165° for 20 minutes.
Sparged with enough 170° water (4+ gal.) to get 6.5 gallons.
Boil: 75 minutes SG 1.052 6.5 gallons
Added 1 tsp. Irish moss with last boil hops.
Hops: .5 oz. Centennial (10.5% AA, 60 min.)
.5 oz. Cascade (6% AA, 30 min.)
1 oz. Willamette (5% AA, 10 min.)
1 oz. Willamette (aroma)
Yeast: #1056
Log: Added aroma hops in 2nd rack.
Carbonation: Added 6 oz. corn sugar before bottled. Let sit 2 weeks in bottle to carbonate. Enjoy.
