Alcohol: 5.5% v/v (4.3% w/w)
Water: Gypsum @ beginning of boil 3 tsp
Grain: 15 lb. American 2-row
1 lb. American Munich
12 oz. Belgian biscuit
1 lb. American crystal 10L
1.5 lb. Flaked wheat
Mash: 75% efficiency
Single step infusion @ 155°F for 60 minutes
Boil: 70 minutes SG 1.040 13 gallons
Add 1/4 ounce Cascade hops @ beginning of boil (70 minutes). Procede with regular hopping schedule (3/4 ounce Cascade hops @ 60 minutes left of boil.
Add Irish Moss last 15 minutes of boil 3 tsp
Hops: 1 oz. Cascade (6% AA, 60 min.)
1 oz. Tettnanger (4.5% AA, 45 min.)
1 oz. Tettnanger (4.5% AA, 30 min.)
1 oz. Cascade (6% AA, 15 min.)
Yeast: Wyeast 1056 in 1 qt. starter
