The is an American Pale Ale which is an attempt at a Summit Extra Pale Ale clone.

Bitterness: 42 IBU
OG: 1.057 FG: 1.010
Alcohol: 6.1% v/v (4.8% w/w)
Water: I use reverse osmosis water. I add 2 teaspoons gypsum to the mash shortly after mash in. I add 1 teaspoon gypsum to the sparge water.
Grain: 12 lb. 0 oz. Beeston's Maris Otter
0 lb. 8 oz. Beeston's Medium Crystal
Mash: 72% efficiency
Strike temp is 155F. Mash at 152 for 90 minutes. Mash out at 169F for 5 minutes. Sparge and collect 6.5 gallons.
Boil: 60 minutes SG 1.048 6.5 gallons
1 tsp Irish moss added during last 5 minutes.
Hops: 1 oz. Perle (6.3% AA, 60 min.)
0.5 oz. Cascade (4.9% AA, 60 min.)
0.5 oz. Cascade (4.9% AA, 30 min.)
0.5 oz. Cascade (4.9% AA, 15 min.)
1.0 oz. Cascade (aroma)
Yeast: Wyeast 1056 prepared as a 1 quart starter.
Log: Dry hop with 1 ounce Cascade during primary.
Carbonation: 2.4 volumes Corn Sugar: 4.66 oz. for 5.5 gallons @ 71°F
