Nothin' Special Pale Ale

I use a lot of grain because my setup is somewhat rudimentary
(a makeshift false bottom, a 10 gal. stainless steel boiling
kettle that doubles as a mash-tun, and a 5 gal. SS kettle that I use
as a hot liquor tank). The efficiency is not what I'd like, though it's
steadily improving. Thus, I throw a lot of grain in there and hope
that some of it sticks.

Beer: Nothin' Special Pale Ale Style: American Pale Ale
Type: All grain Size: 4 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 38 IBU
OG: 1.066 FG: 1.012
Alcohol: 7.0% v/v (5.5% w/w)
Water: None for this batch-- I use Baltimore city tap water (it's surprisingly
good for brewing).
Grain: 11 lb. American 2-row
8 oz. American crystal 40L
8 oz. Dextrine malt (Cara-Pils)
Mash: 60% efficiency
I use 2-row pale malt, which is highly modified, so it's a simple
infusion mash (at 154 deg. F for this batch).
Boil: 90 minutes SG 1.044 6 gallons
I use absolutely no additional ingredients.
Hops: .5 oz. Nugget (12% AA, 60 min.)
1 oz. Tettnanger (4.5% AA, 15 min.)
Yeast: My yeast starter is simple but effective: I boil 14 oz. Malta Goya
(which is basically unfermented wort), allow it to cool, and pitch
7 g. Danstar Nottingham Dry Ale yeast. While this idea may cause
some brewers to flinch, the process is very effective.
Log: Fermented at @70 deg. F.
Carbonation: Bottle with 4 oz. corn sugar.
