SOS Pale Ale

This brew is being done for a home-brew club competition. The club is called "Sultans of Swig" thus SOS.

Beer: SOS Pale Ale Style: American Pale Ale
Type: Partial mash Size: 5.5 gallons
Color:
9 HCU (~7 SRM)
Bitterness: 32 IBU
OG: 1.052 FG: 1.009
Alcohol: 5.5% v/v (4.3% w/w)
Water: I use bottled spring water from the grocery store
Grain: 1 lb. American 2-row
8 oz. American crystal 20L
8 oz. Flaked wheat
Mash: 50% efficiency
Mash grains @152f for at least 30 minutes. Sparge with 5 gallons 170f water.
Boil: 60 minutes SG 1.047 6 gallons
5 lb. 8 oz. Light dry malt extract
Bring volume up to 6 gallons to allow for boil loss.
Add 1/2 tsp. irish moss for 60 minutes & 1/2 tsp for 15 minutes
Hops: 1 oz. Cascade (6.1% AA, 60 min.)
.5 oz. Cascade (6.1% AA, 30 min.)
.5 oz. Cascade (6.1% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: Wyeast 1272 (American Ale 2) in starter stepped up to 2 quarts in 2 steps.
Log: Brewed on 5/10/00
Racked on 5/16/00 with 1oz Cascade dry hopped in hop bag.
Bottled and kegged on 5/22/00 (bottle enough for competition, keg the rest)
Carbonation: Bottle 6 bottles for competition using "prime tabs".
Keg the rest 10psi to blow off head room. 30 psi., shake, repeat until desired carbonation is obtained.
