Mash: 73% efficiency
Mash in at 168 - Mash temp 152, allow to fall no lower than 149. Use 1.5 Qts/pound, about 5 gallons. Hold mash temp 60 minutes. Continuous sparge at 170.
Boil: 60 minutes SG 1.051 7 gallons
Irish Moss and Yeast nutrient added at 15 min remaining in boil
Hops: 1 oz. Citra (13.% AA, 60 min.)
.5 oz. Saaz (9.7% AA, 15 min.)
.5 oz. Citra (13.% AA, 15 min.)
.5 oz. Citra (aroma)
Yeast: two acivator slap packets of 1098, london ale yeast. Pitch at 70 degrees, hold at 70 for three hours, lower to 60 degrees until fermentation is complete.
