Grain: 23 lb. Golden Promise
1 lb. American Munich 10L
1 lb. American crystal 60L
4 oz. Torrified wheat
3 lb. Belgian CaraMunich
Mash: 80% efficiency
90 minute mash @ 151-152
Boil: 65 minutes SG 1.061 13.5 gallons
Used 12 drops Fermcap, still boiled over a touch. Needed spray bottle at the ready. Used pellets in a bag (paint strainer).
7.5 minute additon is actually 10min and 5 min additons of - Simcoe .75, Amarillo 1.0. Added 1 and 1 at Flame out.
Hops: 3 oz. Warrior (15.8% AA, 60 min.)
.75 oz. Simcoe (12.2% AA, 20 min.)
1 oz. Amarillo (7.5% AA, 20 min.)
.75 oz. Simcoe (12.2% AA, 15 min.)
1 oz. Amarillo (7.5% AA, 15 min.)
1.5 oz. Simcoe (12.2% AA, 7.5 min.)
2 oz. Amarillo (7.5% AA, 7.5 min.)
4 oz. Simcoe (aroma)
4 oz. Amarillo (aroma)
3 oz. Ahtanum (aroma)
Yeast: WYeast 1335. British Ale II. Used starter.
Log: Tried to ferment around 65-68 degrees for first few days (evaporative cooler method), then let it settle out after 5 days to around 70F. Racked to secondary, added 1.5oz each hop to each of 2 carboys. No bags for DH.
Tasting: Amazing. As close as I could see getting.
