An attempt to make a fruity, well hopped IPA

Bitterness: 50 IBU
OG: 1.056 FG: 1.023
Alcohol: 4.3% v/v (3.4% w/w)
Water: No water treatment

Grain: 1.0 lb. Crystal
Steep: Grains were steeped up to a temperature of 150 degrees
Boil: 60 mins minutes SG 1.124 2.5 gallons
7.5 lb. Pale Extract
0.67 lb. Light Dry
I used 1 tsp of Irish Moss with 10 minutes to go in the boil
Hops: 0.5 oz. Eroica (10.6% AA, 60 min.)
1.5 oz. Eroica (10.6% AA, 30 min.)
1.0 oz. Cascade (4.3% AA, 0 min.)
1.0 oz. Cascade (aroma)
Yeast: Wyeast 1968
Log: Brewing Date 9/12/97
Fermentation Temperatures 74 degrees
Racked on 9/15/97 into secondary
1.0 oz Cascade 4.3%A Dry Hopped
Kegged on 10/13/97
Carbonation: 3/4 cup corn sugar added at kegging time
Tasting: Attenuation is only 59%. Tasting before priming showed a dry, highly
hopped beer. Beer was kegged into Medicine Rock small kegs. This is
a dry, full bodied beer, but given the amount of dry hopped Cascades,
I was a little surprised that there wasn't more aroma and attribute
this to the fact that I put it into the secondary earlier than usual
and some of the aroma may have blown off with the still very active
fermentation. Still, there was adequate aroma for the style and for
my taste. I am an unrepentant hop head.
