Double I.P.A.

To get a high OG and low FG I did 3 boils, first with 6.6 lb of liquid ME, second with 3.5 lb of dry, third with 1 lb liquid.

All of the hops are in the 1st boil with 3.5 gallons, because of this IBUs will be about 85 not 55.

Grain: 0.5 lb. American crystal 40L
0.75 lb. Belgian CaraMunich
Steep: Steeped at 155 for 30 min.
Boil: 60 minutes SG 1.130 3.5 gallons
6.6 lb. Light malt extract
3.5 lb. Light dry malt extract
1 lb. Amber malt extract
First boil was 3.5 gallons, boiled for 60 min with hops. Each of the others 0.5 gallon boiled for 5 min.
Irish Moss at 15min.
Hops: 0.25 oz. Centennial (9.1% AA, 60 min.)
1 oz. Galena (10.1% AA, 60 min.)
0.25 oz. Challenger (7% AA, 60 min.)
0.5 oz. Amarillo (8% AA, 60 min.)
0.25 oz. Centennial (9.1% AA, 45 min.)
0.25 oz. Challenger (7% AA, 45 min.)
0.5 oz. Amarillo (8% AA, 45 min.)
0.25 oz. Centennial (9.1% AA, 30 min.)
0.25 oz. Challenger (7% AA, 30 min.)
0.25 oz. Centennial (9.1% AA, 15 min.)
0.25 oz. Challenger (7% AA, 15 min.)
1 oz. Czech Saaz (aroma)
Yeast: Used a White Labs Super High Gravity Ale Yeast with a 1 pint starter.
Log: Let the first wort ferment for 5 days.
Added the second wort and let ferment 5 days.
Added the third wort and let ferment 2 weeks.

At this point gravity was 1.012 and racked to secondary for 2 weeks.
Dry hopped with a about 1.5 ounce mixed leaf perle hops and plug saaz hops.

Bottled with 3/4 cup sugar.
