Bitterness: 126 IBU
OG: 1.072 FG: 1.010
Alcohol: 8.0% v/v (6.3% w/w)
Water: 1 TBS 5.2 Mash Stabilizer, 1 tsp gypsum
Grain: 11 lb. Breiss 2-row
8 oz. Gambrinus Honey Malt
8 oz. Breiss crystal 80L
4 oz. Weyermann Carafoam (Dextrin)
1 lb. Maris Otter Malt
Mash: 65% efficiency
Mash with 1.5 qt per pound at 155F for 60 minutes. Continuously sparge with 170F water to attain 6.5 gal.
Boil: 60 minutes SG 1.056 6.5 gallons
1 lb. Amber dry malt extract
Add DME and 1 tsp Irish Moss last 15 minutes of boil.
Hops: 1 oz. Millenium (15% AA, 60 min.)
1 oz. Millenium (15% AA, 30 min.)
.5 oz. Glacier (7.4% AA, 30 min.)
1 oz. Cascade (7.8% AA, 15 min.)
.5 oz. Glacier (7.4% AA, 15 min.)
.5 oz. Millenium (aroma)
Yeast: Smack pack of Wyeast 1056 (American Ale)
Log: Primary fermentation 5-7 days at 70F. Rack to secondary and add 1 oz Cascade hops and 1/2 oz Millenium hops. Allow 1 week in secondary, keg and force carbonate.
Carbonation: 2.0 volumes Keg: 6.8 psi @ 40°F
