Hoptopia

I have made this beer several times. Summit hops are key to the success of this fine beer. Generally, one week for primary fermintation followed by 3 to 7 days in the secondary fermenter with dry hops results in a complete fermentation. I then keg the beer and force carbonate.

Bitterness: 83 IBU
OG: 1.072 FG: 1.010
Alcohol: 8.1% v/v (6.3% w/w)
Water: City of Bend (Oregon) tap water.
Grain: 3.75 lb. American 2-row
22 lb. British pale
1 lb. 4 oz. American Vienna
9 oz. German Munich
4 oz. American crystal 120L
9 oz. Dextrine malt (Cara-Pils)
Mash: 85% efficiency
Mash in at 122 degrees for 30 minutes, raise mash to 158 for 60 minutes, mash-out at 168 for 10 minutes, sparge with 8.5 gallons of 168 degree water
Boil: 90 minutes SG 1.065 14 gallons
2 tsp gypsum in both mash water and sparge water
2 tsp of Irish moss w/ 10 minutes remaining in boil
2 tsp of yeast nutrient w/ 10 minutes remaining in boil
Hops: 2.5 oz. Summit (18.1% AA, 60 min.)
2.5 oz. Summit (18.1% AA, 10 min.)
2 oz. Summit (18.1% AA, 5 min.)
Yeast: I use two of the Wyeast Northwest Yeast (#1332) slap packs, or I prefer to brew again after the fermentation of my previous batch is complete and then re-use the yeast from the fermenter. Once you try this you will be highly motivated to do it again because the resulting fermentation(s) begin (visibly) very fast--within an hour and become vigorous within 12 hours and if your fermentation temperature is kept between 68 and 70 degrees you will have a very complete fermentation.
Log: Dry hop with all of the summit hops you can afford--I try to use a minimum of 2 ounces. Once kegged or bottled, allow to condition for at least three weeks.
Carbonation: Force carbonate for very consistent carbonation levels; otherwise use this site to help calculate the quantity of priming sugar.
Tasting: This beer has the hop character of Grant's Hopzilla, Bend Brewing's Hop Head, Deschutes Breweries' Hop Trip and Pelican Brewing's IPA. If you like big hoppy beers, this one is for you.
