Type: All grain Size: 11 gallons
Color:
27 HCU (~14 SRM)
Bitterness: 57 IBU
OG: 1.061 FG: 1.012
Alcohol: 6.4% v/v (5.0% w/w)
Water: Tap water preboiled for 15 minutes uncovered.
Grain: 18 lb. American 2-row
4 lb. Wheat malt
2 lb. American crystal 40L
8 oz. American chocolate
Mash: 75% efficiency
Beta Amylase Rest :
60 minutes at 142 deg.
30 minutes at 148 deg.

Alpha Amylase Rest:
30 minutes at 160 deg.
Boil: 60 minutes SG 1.056 12 gallons
Hops: 1 oz. Chinook (12% AA, 60 min.)
1 oz. Cascade (6% AA, 45 min.)
1 oz. Kent Goldings (5% AA, 45 min.)
1 oz. Cascade (6% AA, 30 min.)
1 oz. Cascade (6% AA, 15 min.)
1 oz. Chinook (12% AA, 15 min.)
1 oz. Kent Goldings (5% AA, 15 min.)
Yeast: Wyeast #1028 for 5 gal.
Wyeast #1058 for 5 gal.
Makes two 5 gal. batches.
Log: Ferment at 70 deg. in primary for 2 weeks.
Move to secodary fermentor and sit for 3 weeks while dry hopping with 2 oz Cascade
for each 5 gal. batch.
Filter with 15 micron filter and move to carboy which was prefilled with CO2.
Be sure to quaff copious amounts of Sam Adams while brewing!
Carbonation: Force carnonate with CO2 from tank.
Tasting: I'll let you know in about 2 months!
