Quad Hopper

The Cascade and Willamette hops are both dry hop additions at 2ndary fermentation. 1 oz oak chips (no toast)

Water: 2 tsp gypsum to water
Grain: 8 oz. American 2-row
1 lb. American crystal 60L
Steep: Toast 2-row malted barley on cookie sheet in oven at 350° until a reddish hue. Place grains in muslin bag add to 1 1/2 gal cool water. Bring to 155° and hold for 30 minutes. Sparge with 1/2 gallon at 170° bringing to 2 gallons.
Boil: 60 minutes SG 1.145 2 gallons
6 lb. Light dry malt extract
1 tsp irish moss at 45 minutes
Hops: 2 oz. Nugget (13.8% AA, 60 min.)
1 oz. Mt. Hood (4.5% AA, 15 min.)
1 oz. Cascade (aroma)
1 oz. Willamette (aroma)
Yeast: White Labs 001 California Ale
Log: 7 days primary at 70°
14 days secondary with Cascade hops, Willamette hops and oak chips.
Carbonation: Force carbonated in keg.
