Bitterness: 59 IBU
OG: 1.072 FG: 1.014
Alcohol: 7.4% v/v (5.8% w/w)
Water: 1 tsp gypsum
Grain: 10 lb. American 2-row
2 lb. German Vienna
1 lb. American crystal 40L
1 lb. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
I used a 1 hour simple infusion - strike at 170. Mash at 149. Recirculated about 1 gallon of runnings to insure nice grain bed.
Boil: 60 minutes SG 1.051 7 gallons
Irish Moss last 15 minutes.
Hops: 1 oz. Chinook (12% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 60 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Kent Goldings (5% AA, 15 min.)
Yeast: A really nice fresh Wyeast 1056 American Ale. Racked after 7 days--added another .5 oz Chinook to the secondary.

Carbonation: 2.0 volumes Corn Sugar: 2.75 oz. for 4.5 gallons @ 68°F
Prime with 2.75 oz corn sugar
