Centennial IPA

This is a nice light colored, medium strength, VERY bitter and aromatic IPA with great head retention.

Type: All grain Size: 5 gallons
Color:
5 HCU (~5 SRM)
Bitterness: 83 IBU
OG: 1.066 FG: 1.013
Alcohol: 6.9% v/v (5.4% w/w)
Water: I use spring water because the water in my area sucks.
Grain: 11 lb. 0 oz. American 2-row (Great Western)
4 oz. Munich 9L
4 oz. American crystal 10 - 15L
4 oz. Dextrine malt (Cara-Pils)
4 oz. Wheat malt
Mash: 75% efficiency
I use 2 rubbermaid picnic coolers, one fitted with a phil's phalse bottom as a sparge / mash setup.
Boil: 60 minutes SG 1.055 6 gallons
2 tsp gypsum added to water. 1 tsp Irish Moss added last 15 minutes.
Hops: 2 oz. Centennial (10.5% AA, 60 min.)
2 oz. Centennial (10.5% AA, 5 min.)
2 oz. Chinook (whole hops) (aroma)
Yeast: Wyeast 1056 XL (liquid yeast packet) Popped 1 day before brewing.
Log: brewing on May 2, 2004. Plan to do dry hopping on May 5 or 6, just after peak of fermentation activity. Ask me how it came out and I'll be happy to share the results!
Carbonation: Standard carbonation level. (4 oz. corn sugar in 5 gallons when bottling).
