Imperial IPA

My first shot at a double/Imperial IPA.

Type: All grain Size: 5 gallons
Color:
15 HCU (~9 SRM)
Bitterness: 118 IBU
OG: 1.085 FG: 1.018
Alcohol: 8.6% v/v (6.8% w/w)
Water: A bit of Burtonizing, just for grins.
Grain: 7.5 lb. American 2-row
7 lb. Belgian pale
4 oz. British amber
8 oz. Belgian CaraMunich
8 oz. Wheat malt
Mash: 70% efficiency
Mash at 150°F for 60-75 minutes. Optionally use a 15-minute 140°F rest first followed by a 45-minute 158°F rest for better fermentability.
Boil: 90 minutes SG 1.061 7 gallons
8 oz. Corn sugar
Irish moss as per instructions.
Hops: 2 oz. Centennial (10.5% AA, 60 min.)
0.66 oz. Centennial (10.5% AA, 30 min.)
0.67 oz. Hallertauer (4.25% AA, 30 min.)
0.67 oz. Kent Goldings (5% AA, 30 min.)
0.67 oz. Centennial (10.5% AA, 15 min.)
0.66 oz. Hallertauer (4.25% AA, 15 min.)
0.67 oz. Kent Goldings (5% AA, 15 min.)
0.67 oz. Centennial (10.5% AA, 0 min.)
0.67 oz. Hallertauer (4.25% AA, 0 min.)
0.66 oz. Kent Goldings (5% AA, 0 min.)
Yeast: Safbrew S-33.
Carbonation: Moderately high carbonation.
