Daisy's IPA

The name of this comes from the dog who ate the grain before I got a chance to brew with it. Funny story

Type: Extract w/grain Size: 5.5 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 71 IBU
OG: 1.059 FG: 1.012
Alcohol: 6.1% v/v (4.8% w/w)
Water: Spring water
1 tsp of gypsum with the mash
Grain: 1.61 lb. American 2-row
8 oz. American crystal 20L
12 oz. Dextrine malt (Cara-Pils)
Steep: Used 2.5 gallons of 155° water to steep, left grains in until conversion test was the right color. 1 gallon of 170° water to sparge with.
Boil: 60 minutes SG 1.093 3.5 gallons
7.0 lb. Light malt extract
Irish moss with 15 min left.
Hops: 2.0 oz. Centennial (10.5% AA, 60 min.)
1.5 oz. Northern Brewer (8.5% AA, 30 min.)
1.00 oz. Cascade (6% AA, 15 min.)
1.00 oz. Cascade (aroma)
Yeast: Wyeast 1056 American Ale
Log: Ferment for 7 days in primary @ 65 - 70°. Rack to secondary for two weeks then dry hop with 5 days left. (1oz of cascade hops)
Carbonation: 3/4 cup of priming sugar
