Devil's Cove IPA #2

This IPA is based on the original Devil's Cove IPA recipe and hopefully is even better than the original.

Beer: Devil's Cove IPA #2 Style: India Pale Ale
Type: All grain Size: 5 gallons
Color:
13 HCU (~9 SRM)
Bitterness: 58 IBU
OG: 1.079 FG: 1.012
Alcohol: 8.7% v/v (6.8% w/w)
Water: 1.5 tsp gypsum. Also use nice hard water to support a high hopped beer.
Grain: 10 lb. American 2-row
2.5 lb. German Vienna
1 lb. American crystal 40L
1 lb. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
Strike at 175 F, infusion mash at 149 F for 60 minutes. Recirculate mash for 15 minutes prior to sparge. Sparge using 190 F water to yield 170 runnings.
Boil: 60 minutes SG 1.053 7.5 gallons
Irish Moss, also add oak chips in strain bag to last 30 minutes of boil.
Hops: 1 oz. Chinook (12% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 60 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Kent Goldings (5% AA, 15 min.)
Yeast: Wyeast 1056 American Ale with starter. Oxygenated prior to pitching.
Log: Dry hop secondary after 7 days with .5 oz Cascade.
