Misery Bay I.P.A.

My first all-grain batch, trying for a pretty extreme American
style IPA.

Type: All grain Size: 5.5 gallons
Color:
17 HCU (~10 SRM)
Bitterness: 66 IBU
OG: 1.070 FG: 1.014
Alcohol: 7.2% v/v (5.6% w/w)
Grain: 10 lb. 8 oz. British pale
8 oz. Belgian aromatic
1 lb. Belgian biscuit
8 oz. Dextrine malt (Cara-Pils)
4 oz. Belgian CaraMunich
8 oz. Belgian CaraVienne
8 oz. Raw wheat
Mash: 75% efficiency
Single infusion at 153°F.
Boil: 75 minutes SG 1.055 7 gallons
Added Irish Moss last 15min.
Also, plan to dry-hop w/ 2oz. leaf Cascades in secondary.
Hops: 1 oz. Chinook (12% AA, 60 min.)
.75 oz. Cascade (6% AA, 45 min.)
.5 oz. Cascade (6% AA, 30 min.)
.5 oz. Cascade (6% AA, 15 min.)
.75 oz. Cascade (aroma)
Yeast: Wyeast 1056 American Ale, no starter.
Log: Brewed on 10/11/03, pitched (glass) at 75° - ferm started w/in 8hrs.
Racked to secondary (glass) on 10/19/03.
Bottled on 11/9/03.
Carbonation: Bottle conditioned w/ 3/4 cup priming sugar.
Tasting: Tried at 1 wk. - Too young, a little grassy taste from the 2oz. dry-hop.
Tried at 2 wks. - getting better, 3 wks. better still.
Took to LHBC meeting on 12/4/03 and got raves, this is my best yet.
I will be making this regularly.
