West Indies Pale Ale

Collor will be a little darker due to some scorching in the kettle, which will also add some carmel notes.

13 HCU (~9 SRM)
Bitterness: 48 IBU
OG: 1.065 FG: 1.016
Alcohol: 6.3% v/v (4.9% w/w)
Grain: 10 lb. British pale
1 lb. British Munich
1 lb. British Carastan
Mash: 72% efficiency
SIngle temp infusion, 1.33 qt./lb. at 150°.
Boil: 90 minutes SG 1.050 6.5 gallons
Irish moss at start of boil.
Hops: 1 oz. Challenger (8% AA, 75 min.)
1 oz. Fuggles (4.75% AA, 20 min.)
1 oz. Fuggles (4.75% AA, 7 min.)
Yeast: Wyeast British Ale.
Log: Ferment ten days at 70°. Bottle and age for one month, flipping the bottles every five days or so to allow for higher attenuation like an ale would have received during its voyage.
Carbonation: 1.5 volumes Corn Sugar: 1.61 oz. for 4.5 gallons @ 70°F
