Earth Day IPA

Going through some old recipes I've tried, came across this one. This is (by far) my favorite beer ever brewed.

Beer: Earth Day IPA Style: India Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 57 IBU
OG: 1.068 FG: 1.012
Alcohol: 7.3% v/v (5.7% w/w)
Water: Due to lousy tapwater, I brew with bottled water.
Grain: 8 oz. American Munich
8 oz. Dextrine malt (Cara-Pils)
Steep: Throw them in the 'sock' and remove before the water comes to a boil. Gently rinse them with about 2 cups of water.
Boil: 60 minutes SG 1.086 4 gallons
4 lb. Light malt extract
3 lb. Light dry malt extract
1 lb. Belgian candi sugar
1 tsp Irish Moss added 15 minutes prior to the end of the boil.
Hops: 1 oz. Eroica (10.8% AA, 60 min.)
.5 oz. Galena (13.4% AA, 60 min.)
1 oz. Cascade (5.4% AA, 15 min.)
1 oz. Tettnanger (4.7% AA, 15 min.)
.5 oz. Galena (aroma)
Yeast: I used slurry from a previous batch of an amber ale(1056 American Ale)
Log: Primary fermentation was pretty quick (about 7 days) due to the slurry. I dry-hopped with an ounce of Cascade. Also added 1 packet of gelatine to help with clarity. Secondary fermentation was done in 2 weeks.
Tasting: After 3 weeks in the bottle this beer (although it smelled amazing) was so bitter that it sucked my face inside out. It was a long, tough wait but after about 10 weeks in the bottle it was so good it blew my mind!!! The amazing thing is that it continued to improve right up until I drank the last of it (almost 5 months in the bottles!). I've brewed this one a number of times (playing with differing hops and yeasts...the 1056 is very good for this recipe) and it continues to be my favorite. The wait is brutal but well worth it (imho).
