Broadside IPA

Started 11-18-01. Sent to St. Louis Brews Happy Holiday Competition 12-6-01. Won second place in the IPA category.

Type: All grain Size: 9.75 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 80 IBU
OG: 1.062 FG: 1.026
Alcohol: 4.7% v/v (3.7% w/w)
Water: Dothan City water.
Grain: 18 lb. American 2-row
Mash: 91% efficiency
Mash at 120F for 30 minutes. Step up to 145F for 15 minutes. Step up to 150F for 45 minutes. Sparge at 168F. Stuck mash caused plenty of recirculation problems.
Boil: 45 minutes SG 1.051 12 gallons
1.5 tsp Irish Moss
Hops: 3 oz. Centennial (9.4% AA, 45 min.)
2 oz. Cascade (6% AA, 15 min.)
2 oz. Centennial (9.4% AA, 15 min.)
2 oz. Crystal (aroma)
Yeast: London Ale ESB - Wyeast 1968 from 5-12-01.
Tasting: The Centennial Hops are very pronounced. By mistake I added 1 oz to much in the boil. I would prefer to have slightly less bitter. However, this may have helped offset the sweetness that the higher FG produced. A clean taste. There is some chill haze that I would like to have drop out. I brewed this beer for John & Joy's wedding.
