A humble attempt to reproduce Bell's Two Hearted Ale

Type: Extract w/grain Size: 5.5 gallons
Color:
17 HCU (~10 SRM)
Bitterness: 53 IBU
OG: 1.075 FG: 1.016
Alcohol: 7.6% v/v (6.0% w/w)
Water: Des Moines municipal tap
Grain: 8 oz. Wheat malt
8 oz. Belgian biscuit
1 lb. American crystal 20L
1 lb. Dextrine malt (Cara-Pils)
Steep: Steep grains at 160°F for 30 minutes. Sparge with 1 quart 160°F water.
Boil: 60 minutes SG 1.063 6.5 gallons
8 lb. Light dry malt extract
1.0 tsp Irish moss last 15 minutes of boil
Hops: 1 oz. Cascade (7% AA, 60 min.)
2 oz. Cascade (7% AA, 30 min.)
1 oz. Cascade (7% AA, 5 min.)
1 oz. Cascade (aroma)
Yeast: White Labs WLP009 Australian Ale, pitchable tube stepped up to pint starter.
Log: Primary: one week at 66°F, plastic
Secondary: one week at 66°F, glass
Carbonation: Kegged. 25 psi at 50°F for 48 hours, shaken often. Served at 5 psi after 10 days.
Tasting: A whole lot of Cascade zing! Moderately malty-sweet with a perfect bitter balance. I will tone down the dry hops next batch.
