Arlington IPA

This is my first foray into AG brewing. I also tried first-wort hopping for the first time.

Type: All grain Size: 5.0 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 72 IBU
OG: 1.059 FG: 1.012
Alcohol: 6.1% v/v (4.8% w/w)
Water: Poland Springs Water
3/5 tsp gypsum in mash water
1 tsp gypsum in sparge water
Grain: 10 lb. American 2-row
4 oz. Briess Special Roast
8 oz. Dextrine Malt (Cara-Pils)
Mash: 75% efficiency
Single-infusion mash @ 153°F for 60 minutes with 3.3 gallons.
Temperature only fell 1°F over 60 minutes in Gott cooler.
Sparged @ 170°F for 45 minutes with 5.25 gallons.
Boil: 90 minutes SG 1.046 6.5 gallons
1 tsp Irish moss (15 min)
Yield to fermenter was less than 5 gallons -- lots of evaporation.
Hops: 1 oz. Centennial (9.7% AA, 60 min.)
.5 oz. Cascade (7% AA, 20 min.)
.5 oz. Centennial (9.7% AA, 20 min.)
.5 oz. Cascade (FWH) (7% AA, 20 min.)
.5 oz. Cascade (7% AA, 10 min.)
.5 oz. Cascade (dry-hop) (aroma)
Yeast: Wyeast American Ale #1056 (1L starter)
Log: Brewed Sunday 4/1/01.
Still in primary fermentation and starting to clear.
Will rack to seconday Sunday 4/8/01.
Tasting: Smells great but not taste results yet.
