Bitterness: 66 IBU
OG: 1.066 FG: 1.012
Alcohol: 7.0% v/v (5.5% w/w)
Water: Burton water salts
Grain: 25 lb. British pale
2.5 lb. British crystal 40L
Mash: 75% efficiency
Single step RIM at 150F
Boil: 75 minutes SG 1.054 17 gallons
3.3 lb. Brown sugar
Hops are whole leaf
Irish Moss at 15 mins remaining
Hops: 6 oz. Bullion (8.5% AA, 60 min.)
3 oz. Fuggles (4.75% AA, 30 min.)
3 oz. Kent Goldings (5% AA, 15 min.)
1 oz. Fuggles (aroma)
1 oz. Kent Goldings (aroma)
Yeast: Wyeast 1028 stepped up to 4 litres
Log: Last addition of hops added in the hop back. Open ferment at 68F for 3
days in keg, then prime and close. Ferment for 10 days , syphon
off trub every 2 days. Cool to serving temperature, condition for 14
days. Syphon off any remaining trub and serve.
Carbonation: 1/2 gallon of wort held back for priming.
