Hop-Sack India Dark Ale

For all you Lagunitas I.P.A lovers out there this one might be right up your alley!!!

Beer: Hop-Sack India Dark Ale Style: India Pale Ale
Type: Extract Size: 5.5 gallons
Color:
29 HCU (~15 SRM)
Bitterness: 60 IBU
OG: 1.048 FG: 1.011
Alcohol: 4.7% v/v (3.7% w/w)
Water: Pre-boiled all water before begining
(distilled spring water from pach'n save)
Grain: .5 lb. British Munich
1 lb. American crystal 40L
1 lb. American crystal 90L
.5 lb. Dextrine malt (Cara-Pils)
Steep: We roasted all the crystal malts in the oven at 250 degrees for about 20-25 minutes and placed them seperatly in a grain bag. The cara-pils were placed in there own bag at the same time.Removed grains just before the water begins to simmer or 150 degrees or 20-30 minutes which ever comes first, remove grains.
Boil: 60 minutes SG 1.044 6 gallons
4 lb. Ultra light malt extract
2 lb. Wheat extract
2 lb. Munich malt extract
Bring the wort to a rolling boil and then remove from the burner.Stir in the Extracts until dissolved and place it back on the burner until it boils and proceed to follow the hop schedule adding 1/2 tsp. of Irish Moss at the 30th min.
Hops: 1 oz. Centennial (10.5% AA, 60 min.)
.5 oz. Willamette (5% AA, 45 min.)
.5 oz. Mt. Hood (4.5% AA, 30 min.)
.5 oz. Mt. Hood (4.5% AA, 15 min.)
1 oz. Willamette (5% AA, 15 min.)
2 oz. Centennial (aroma)
Yeast: We tried a new product from the Wyeast company which was an American Ale yeast #1272. Its not a smack pack but more of a tube and cap and doesnt require you to wait hours and hours for yeast to set up.Its ready for direct use.Hear in the bay area we are limited.Most suppliers have this product but its new where were from.

Carbonation: Force carbonated
Tasting: Dont let the dark color fool you it has a smooth start and a dry crisp ending.We didnt really mean for it to be some so dark in color, so we had to give it a new name, thats why we named it an I.D.A.Jason and I tryed to clone a version of Laguanitas I.P.A one of our favorites.We didnt have a recipe so it was a shot in the dark.The williamette hops came out awesome and i think we are addicted to dry hoping with the centennials,have we died and gone to hop heaven???
