Alcohol: 8.8% v/v (6.9% w/w)
Grain: 12 lb. American 2-row
1 lb. 8 oz. Bonlander Munich
3 lb. Goldpils Vienna
8 oz. American crystal 40L
Mash: 72% efficiency
Single infusion at 150°F for 60 minutes. Mashout via 5 quart decoction added to 5 quarts boiling water, brought to boil and reintroduced to mash and held for 10 minutes. Continuous sparge with 170°F water to collect 8.0 gallons in the brewpot
Boil: 70 minutes SG 1.063 8.0 gallons
1 lb. 8 oz. Corn sugar
Add dextrose last minute of boil.
Hops: 1 oz. Nugget (13.5% AA, 60 min.)
1 oz. Columbus (15.4% AA, 60 min.)
1 oz. Columbus (15.4% AA, 30 min.)
1 oz. Centennial (8.3% AA, 15 min.)
2 oz. Simcoe (1.3% AA, 15 min.)
1 oz. Centennial (aroma)
1 oz. Amarillo (aroma)
2 oz. Simcoe (aroma)
!!!1+ 2 dry oz. Columbus (aroma)
!!!2 dry oz. Chinook (aroma)
!!!2 dry oz. Cascade (aroma)
Yeast: Safale US-05 from prior ipa batch
Log: Ferment at 62°F. 7-10 days primary, 14 days secondary (with dry hops).
Carbonation: Keg and force carbonate.
