This recipe ended up being a very good clone of a beer I had at a
local brewpub.

Type: All grain Size: 5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 52 IBU
OG: 1.066 FG: 1.014
Alcohol: 6.7% v/v (5.3% w/w)
Water: I have very soft water so my treatment is the same for all recipes,
1.5 tsp. gypsum per 5 gal. of brew water. Sparge water was treated
with one drop of lactic acid per gallon.
Grain: 9 lb. British pale
.5 lb. American crystal 60L
.75 lb. Dextrine malt (Cara-Pils)
Mash: 86% efficiency
Single decoction with a step up to the final mash-out. Decoction
rests were 143-138°,156°.
Boil: 90 minutes SG 1.046 7.2 gallons
Hops: .75 oz. Challenger (8.2% AA, 60 min.)
1.75 oz. Challenger (8.2% AA, 15 min.)
2.00 oz. Kent Goldings (aroma)
Yeast: WYeast 1275 with a three stage starter.
Log: This beer was brewed on Oct.3 1999. Primary fermentation was in a
6.5 gal. glass carboy at 62° for nine days. One oz. of Kent Goldings
pellets were added to the secondary and was keged 14 days later.
Carbonation: 1.9 volumes Keg: 17.3 psi @ 66°F
Tasting: Decoction mash produced a beer that was slightly darker than is shown
on this spreadsheet. Due to the hopping schedule this I.P.A. was more
fruity than bitter. Very well balanced between bitterness and hop
flavor. Aroma was amazing.
